Using Your Dehydrator To Make Biscotti, Crackers, Jerky, Fruit Leathers, And More!

Did you know you can actually cook stuff in your dehydrator? How about some sweet potato chips? Double-Chocolate Biscotti? Graham crackers? Yes, all of this and more!

Double-Chocolate Biscotti, yield 8-12 biscotti, p. 197 ("biscotti" means twice cooked)

Directions

      • In a good processor, combine almond flour, almonds, chocolate chips, melted chocolate, honey, and vanilla. Pulse until mixture 'comes together'. Add liquid 1 tbs at a time as needed to form a stiff dough that holds together when a handful is pressed into a ball
      • Preheat dehydrator to 115F. Place dough on drying tray in a log shape about 6 inches long, then flatten to 3/4 inch high. Dry until firm - between 2 & 4 hours.
      • Remove from dehydrator, cut into 1/2 inch thing slices. Return slices to dehydrating trays, dry until chewy, firm, or crisp 8 to 12 hours

      • Pulse all ingredients in food processor
      • Spread onto dehydrator trays, spread to 1/8 inch thick. Dehydrate at 115F for 4 hours
      • Cut into squares, then flip and dehydrate 6 more hours (or until dry and crispy)

Sweet Potato Chips, serves 2, p. 105

Ingredients

      • 2 medium sweet potatoes, peeled, sliced
      • 1/2 tsp salt
      • 2 tsp coconut oil (melted)

Directions

      • Set dehydrator to 125F, let it preheat.
      • Put sweet potato slices in a large bowl, drizzle with the oil, season with salt, then toss until well coated.
      • Arrange slices in a single layer on trays
      • Dry 12-20 hours (until dehydrated and crisp)
      • When done, open dehydrator and let chips cool for 30 minutes at room temperature
      • Check dryness by breaking a slice in half - there should not be any moisture along the surface of the break

Finally, there are fruit leathers. These are a chewy, dried fruit product. They are made by pouring pureed fruit onto a flat surface for drying. You can use fresh, frozen, or canned fruit to make fruit leather. Here are some websites with fruit leather recipes.




Other ways you can use your dehydrator for food storage. You can dehydrate the tops of carrots, beets, radishes, etc. Dehydrate those ends of the veggies you cut off (like carrots, celery, zucchini, etc.).Then powder those 'left overs' and mix them together. Add to your soups, stews, sauces at a rate of 1 tbs per person (which is equivalent to 1 cup raw veggies).

You can also dehydrate kale, spinach, lettuce, and other 'greens' to powder and add to soups, stews, and sauces as well. You don't even have to worry about making sure there is space between each leaf! All the nutrients, none of the bulk!

Dehydrate left over celery to make celery powder. You don't need to do anything other than make sure it's clean before dehydrating if you plan to powder it. I like using the celery leaves to make celery powder. Using the leaves gives it a lighter flavor.

Need onion or garlic powder? Take your dehydrated onions or garlic and powder them.

Of course, you'll need a couple of things if you decide you want to dehydrate, like a food processor and a dehydrator!
